Italian Semolina Bread

Some months ago I posted a recipe for artisan bread with Kalamata olives. I love making artisan bread, because it's so easy to make a larger quantity of dough, refrigerate it and then just use from it when needed. Today I have a recipe for semolina bread, using the same principle.

These quantities will make four 1 lb loaves:

- 3 cups durum flour (semolina flour that's labeled "durum")
- 3 1/4 cups unbleached all-purpose flour
- 3 cups lukewarm water
- 1 1/2 tbsp granulated yeast (2 packets)
- 1 1/2 tbsp Kosher salt
- sesame seeds for top crust, about 1-2 tsp
- cornstarch wash
- cornmeal for the pizza peel

I found a wonderful recipe for artisan bread, extremely simple to make but very tasty. It makes two 1-pound loaves.

The ingredients are:
- 1.5 cups lukewarm water
- 1 packet granulated yeast
- 3/4 tablespoons kosher or other coarse salt
- 3 1/4 cups unsifted, unbleached, all-purpose white flour, measured with the scoop-and-sweep method
- 1/4 cup high-quality olives, pitted and halved
- some cornmeal for pizza peel (I don't have a pizza peel, I use a normal cutting board)

The water should feel just a little warmer than body temperature, about 100F. Add the yeast and salt to the water in a 5-quart bowl (don't worry about getting it all to dissolve). Add all of the flour at once and mix it (I asked my KA again to do the honours). Don't knead, it's not necessary! It's finished when everything is uniformly moist, without dry patches, in a matter of minutes.

Ingredientele sunt acestea: - Ingredients 


mai concret

- 500 gr faina - 1 lb and 2 tablespoons all purpose flour
- 1 lingura drojdie uscata - 1 tablespoon dry yeast
- 1 lingura zahar - 1 tablespoon sugar
- 1 lingurita sare - 1 teaspoon salt
- 6 linguri ulei - 6 tablespons vegetable oil
- 300 ml apa calduta - 300 ml lukewarm water
- sare grunjoasa, mac, seminte de susan pentru presarat, ce preferati - kosher salt, poppy seeds, sesame seeds to sprinkle, whichever you prefer
- 1 galbenus de ou, smantana pentru uns - 1 egg yolk, sour cream

Intr-un bol mic amestecati drojdia cu zaharul - combine the yeast and sugar in a small bowl
