A very simple and cute recipe, not costly at all, just the right thing at a time when vegetables are not so abundant, but we feel the need for some fresh flavours on the plate.
Ingredients:
- 6 chicken drumsticks (feel free to use 8, or a whole chicken, cut in pieces)
- 3/4 stick butter
- salt and pepper to taste
For marinating the meat:
- 1 orange
- 1 lemon
- 1 medium onion, very finely sliced
- 1 tablespoon olive oil
- 10 drops Tabasco
First, take care of the marinade: squeeze the orange and the lemon in a big bowl, add the Tabasco, olive oil and sliced onion and mix everything very well. Add the chicken drumsticks (or pieces), making sure they are coated on all sides with the marinade.
Cover and refrigerate overnight, turning the meat from time to time. The next day drain the chicken pieces and place them into a greased stove and oven proof dish. Cut the butter in small pieces and sprinkle over the chicken.
Place the dish in the preheated oven at 400F and bake for about 50-60 minutes, frequently basting it in marinade. When it's done, take the chicken out on a warm plate, pour the rest of the marinade, filtered, over the sauce, bring to a boil (you can also add one tablespoon of sour cream), then pour it over the chicken. I served it with a pilaf with vegetables.
